disclaimer here at the top: i'm still not 100% vegan. i've been trying for about a year and while i'm eating vegan most of the time, i still slip up!
what i've found about veganism is that, unless i have a lot of money to buy premade food, or a lot of time and energy to cook my own food, it can get difficult to stick with
i'm depressive and anxious with some executive dysfunction issues, so i'm not the most naturally organized person. i'm also working 24-32 hrs a week and going to school right now
i have medicine that i need to take with adequate amounts of carbs/protein or else it doesn't work and i get headaches, so if i don't have anything prepared, i try to be pragmatic and eat what's available
but breaking vegan feels like shit! when you know it's something you want to do, that's good for you, for animals and for the planet, even if you're broke and tired you still want to try

SO, what's the point of all this rambling? basically this: this is a judgement free zone where i will post easy vegan food tips for anyone out there who may be like me:
